Finca La Primavera is located in Santa María, Huila, Colombia, and is managed by Aldemar Osorio, a 52-year-old, second-generation coffee grower. The farm consists of 6 hectares of land, with 4 hectares dedicated to growing coffee. Aldemar's lots start by harvesting the ripest of cherries from Monday to Tuesday and are left to ferment in closed barrels with Aldemar’s own recipe of coffee mucilage and water for 90 hours until washing. Parchment is then placed to dry on raised beds for around 12 – 15 days, depending on the weather.
This is a field blend lot, which is a mix of varieties grown on his farm. It really impressed us on the cupping table with both its level of sweetness and pleasing acidity. We are roasting this one on the lighter side to showcase these qualities and preserve the complexity found in this farm blended lot as much as possible. With notes of pear, plum, tropical fruit and agave there is something new to discover in each sip!
